Research on yeasts on Radio3
The quality of the wine also depends on the yeasts that activate the fermentation of the grapes. The biologists who work at the IRVOS laboratories know this very well. Studies on old wine production plants have in fact been carried out since 2002. Research that has revealed traces of indigenous yeasts.
It is these that give uniqueness and at the same time diversity to Sicilian wines, as well as therefore quality. Daniele Oliva, head of the research, was interviewed by Radio3Scienza on the topic in Verona during Vinitaly. Let's hear it in the interview:
