Microbiological analyzes on must and wine
“Full Service” project. This is the name of the contract activated by IRVOS, aimed at wineries, which provides a wine microbiology service. In practice, Sicilian wineries are given the opportunity to monitor all production phases.
These are microbiological analyzes on must and wine, but not only. It will be possible to receive assistance for wineries that already have or want to install a microbiological analysis laboratory and train their staff. And then the Institute also provides adequate protocols for cleansing and sanitizing the filtration line and the filler combined with a consultancy service with the aim of preventing microbiological contamination phenomena in the bottled product.
In short, the IRVOS project falls within the objective of improving the quality of Sicilian wines. And it intends to do so through a modern operating model that combines continuity, cost-effectiveness, simplification and quality of performance. Total yeast count, contaminated yeast count, detection of acetic bacteria and count of acetic bacteria, detection of lactic bacteria and count of lactic acid bacteria, detection of Dekkera/Brettanomyces yeasts, sterility control in the bottle. This would consist of the microbiological analyzes envisaged by "Full Service".
